When I buy headphones and similar accessories, do i need to be looking for impedance matching, or is thus no longer an issue?

You still want to match impedence. The “maximum Power Transform Theorem” shows that maximum power transfer occurs (hence highest efficiency) when the input and output impedences are matched.
